my obsession with oatmeal continues.
as does my obsession with peanut butter and jelly.
remember that post last week about how to make the perfect batch of oatmeal? i left out my favorite combination, as of late.
peanut butter and jelly oatmeal.
combines two of my favorite things. and it is darn good.
i had my first peanut butter and jelly in maybe a year or so, a few weeks ago (stinky sugar detox). on some gluten free bread.
i was just wonderful. i had 2.
i used to have two favorite ways to eat a pb&j sandwich.
first. toasted bread, melt-y peanut butter. cold jelly. preferably raspberry. sliced on a diagonal.
second. soft, whole wheat bread (no white paste please). layer of crunch peanut butter on both sides with jelly in the middle. sliced on a diagonal.
i’ll even take the pb&j lara bars. pb&j on a bagel. on a pita or in a wrap (back when i ate gluten). on a plane. in a train. i would eat it here or there. i would eat pb&j anywhere! love this buzzfeed article on how to eat pb at every meal!
now, i’m not sure if i saw a recipe for pb&j oats or if i was just inspired to put my favorite flavors in a bowl of oatmeal. however it happened, i created something wonderful.
i don’t make this frequently. it’s more of a once-a-week-i-want-an-oatmeal-treat kind of combo. but, since i knew this post was coming, i managed to have 2 bowls already this week!
i added a mashed banana to one bowl (pb&j&b). so good. and i love it with a little yogurt and sunflower seeds.
i am thinking…bacon. bacon makes everything good. so i am pretty sure it would make this, like, the greatest bowl of oatmeal ever. anyone else?! …
peanut butter and jelly oatmeal
* 1 recipe of gluten-free oatmeal base
* 1 tbsp chunky (or creamy) peanut butter (could sub almond or cashew butter)
* 1 tbsp raspberry jelly (or any jelly you like)
* 1 tbsp coconut oil
* splash of dairy-free milk
* sunflower seeds
* mashed banana
* spoon of yogurt (i used goat milk)
1. make a batch of oatmeal base.
2. stir in coconut oil, jelly, and peanut butter until smooth.
3. add splash of dairy-free milk and optional ingredients.
p.s. who else is up for adding bacon to oatmeal?!
