how are you guys doing today?
are you ready for the last week in august?!
so, it’s sunday night here at burpees for breakfast headquarters, aka, my apartment. gilmore girls has been playing for the past couple hours as i caught up on my bloglovin feed. the rooms and i got rid of cable, so the next best this is to have gilmore girls playing continuously, right (currently, one of my favorites is playing – the dance marathon. love fall. ALWAYS wanted to do a dance marathon!)? i’m noshing on a slice of sourdough bread topped with coconut oil and fresh made cashew butter, after finishing a bowl of zoodles with veggies.
here’s how the weekend went down. friday, i honestly can’t remember it well. i had an early day at work. i know i ate a pint of coconut milk cookie dough ice cream (best i’ve ever had!) and a bowl of my favorite cereal, all the while relaxing. friday was my not-so-healthy eats night. and it was good.
saturday, i woke up early and made a trip to trader joe’s. we decided to postpone the fitness photos because we thought it would rain – sunny skies all morning. although, it was good because, my stomach was a little unhappy, so i ended up doing some food prep: sweet potato cubes, brown rice, broccoli slaw (recipe to come), morning glory muffins, and plantain bread. once my tummy was happy, the workout bud and i headed to the gym. can i just say that regular deadlift is a tough move?
i thought i was doing good for my first set, but the bud complained of butt wink, using the back too much, and lack of lockout. blarg. i had him video me the first time and could definitely see the areas i needed to work on. so i kept practicing, kept taking videos, and even just practiced the movement with the lighter bar (35#). i’ve done that before, and i was certainly not ashamed to do it again. by the end of the workout, i finally felt like i was moving my body the correct way. more practice today.
saturday evening was soul food night at my parent’s house. with my black grandparents no longer around, i don’t get some solid soul good as much as i’d like. so, usually once a year, we have a soul food night. since i’m not living at home, i didn’t get to work my magic and convince them to make ribs and my famous jambalaya (oh, i might need to share this recipe soon!). we had pulled pork, beans, collards (which i had to doctor up – mom made them like a white girl), mac and cheese (which i couldn’t have), slaw and watermelon. i made myself some broccoli slaw (recipe to come) and enjoyed way.to.much. pulled pork.
sunday i was up by 7:30ish and i went on a 5 mile walk and studied. the workout bud decided to get his personal training cert and since he helped me study quite a bit, i said i’d return the favor and help him study a couple times. luckily, the stuff he is studying is the same stuff on the study guide for my group fitness cert, so it’s basically review for me. we ended up going to a coffee shop after the walk and i got a cup of delicious coffee. and it was free refills. so i may or may not have filled my venti size cup 3/4 of the way full…4-5 times.
i was wired.
i flew through like 10 chapters, mostly review, for my group fitness stuff. then i came home and finished up my food prep: sweet potato soup, leftover pork (my dad made me take so much home!) and veggie soup (recipe to come), a batch of cashew butter.
and can we just talk about the big can of wild alaskan salmon from trader joes? i usually get the small little can, but decided to go for the big can this week. it’s basically a slab of salmon stuffed into a tin jar. now, at least i know that there is only salmon in the can, but it also had the bones. and skin. i had to get all that out before i could add it to my salmon salad (recipe to come). not. fun.
plus, i did the dishes and a load of laundry. then i hit a wall. and popped in gilmore girls and read blogs.
are you as tired as i am right now just from reading that? i love productive weekends. but i think the coffee was a bit too much. i guess it’s good that i got so much done this weekend. because i only teach one day this week, so i’ll have extra time to relax.
and apparently get some recipes ready to share with you guys. looks like i have a few that i need to post.
