I always want to know surprises.

So, as soon as I saw a GIGANTIC box underneath the tree a few weeks before Christmas, with my name on it, I instantly wanted to know what it was.

I asked and asked and asked for hints. He just told me No each time. He didn’t get annoyed that I kept asking or tell me a fake present to throw me off. He just said ‘Nope’ with a straight face each time.

It annoys the heck out of me!

Needless to say, I was a bit surprised when I opened the present to a HUGE cast iron pan. He was on a roll because he got me a food processor for my birthday. After 5 years, we get appliances as gifts.

cast iron panI’d been wanting a cast iron pan for a while now. I only used it a few times after I got it. I wasn’t exactly sure to use it or even care for it. So, it just made our stove look pretty for a couple weeks.

Eventually, I started getting the hang of cooking with it. And as I kept cooking, I wanted to try new recipes.

I was looking for a recipe for my spaghetti squash one night and I remembered that I pinned a pizza spaghetti squash pie recipe from PaleOMG a while back. You know, one of those that you pin and always forget to make? All I had in the fridge was the spaghetti squash and eggs. It was only 5 ingredients, and I only had 2!

spaghetti squash pieI did have a can of tomatoes and some of there veggies, so I tossed it all together and baked it in the cast iron pan. The end result was so stinking tasty. Even The Boy loved it.

So, when we started the 30 Day Healthy Living and Beyond Challenge, I wanted to make sure we had a couple tasty and different meals each week, so we weren’t eating the same thing. This time, I actually had a protein for the pie and some extra asparagus and mushrooms.

Again, perfection.

Using the cast iron pan for this dish makes all the difference, I think. You get a bit of crispiness around the edges and on the bottom that is just delightful. (If you don’t have one, don’t sweat it. A regular 9×12 pan will work just fine).I can’t want to make brownies in the pan soon. The crispy chewy brownie edges are my FAVORITE.

Now I want brownies.


Next up, cast iron pan brownies. Anyone have a good recipe?! I really want to try black bean brownies or brownies made with avocado. Maybe my first batch will be in the pan! I’ll let you know how it goes and you might see the first ever brownie recipe on the blog!
