PEACHES.
I love peaches in the summer. The thing I don’t like, is how long they take to get ripe. It’s like nothing for days and days, and then all of the sudden, they are ripe and ready to be eaten. Like, now.
The Boy’s mom gave us some of their extra peaches last week and I waited and waited for them to be ready. However, when they were, I had a bit of a tough time trying to figure out how to use them. I ate a few just sliced up with a sprinkle of lime juice (delish!). I had high hopes of slicing a majority and then freezing them for smoothies or peach ‘ice cream’. But that totally didn’t happen. And then I remembered my savory zoodle recipe with peaches from last summer, and I knew I had to craft a new similar recipe.

I love creating savory dishes with peaches because it add just the right amount of sweetness to a dish. When cooking with whole food ingredients, I really like to let the natural flavors shine and complement each other.
This recipe is SUPER simple and came together pretty quickly. The toughest part was making the zoodles. I think my spiralizer is on it’s last leg. When it decides to stop working, I need to get a new one ASAP. It’s my favorite kitchen appliance.

I’ve been on a productivity kick these past few days. The key is to not be in my apartment. At least until I get my standing desk build. Hopefully after BlogFest.
It’s a triple class day today. Luckily, I only have to participate in 1!

Okay I haven’t jumped on the “zoodles” bandwagon yet but I need to…. ASAP. Especially since my toddler refuses her veggies (which as you can imagine drives me bonkers) and I think this might be a way for me to get her to eat them. What gadget do you use to make them?

I’ve never heard of zoodles with peaches before but I definitely want to give it a try. Also, the way you described peaches getting ripe reminds me of avocados. So hard to know when they’re ready!
