HEALTHY LUNCH RECIPES

Last week we talked healthy breakfast recipes and today we are talking healthy lunch recipes! I don’t know if anyone else is like me, but sometimes lunch can be overlooked. It’s in the middle of the day, so usually it ends up being something quick and easy, often times leftovers. My go-to lunch items are usually: a GIANT salad, loaded soup or leftovers. Here are some tasty lunch ideas next time you need a stroke of inspiration!

QUICK & EASY MANGO MACKEREL MANGO BOWL
TIP: I like to make a big batch of sweet potato/butternut squash/nut butter soup and freeze servings in ziplock bags. If I know I’m running late or have a busy week, I’ll pull out a bag and let it thaw overnight, or just keep it in the fridge until it’s lunch time. Enjoy the soup on it’s own or add some frozen veggies and chicken sausage for a more heartier meal!
