The Ultimate Chocolate Peanut Butter Protein Pancakes & Giveaway

In college, I was a boss at making pancakes. The little bit of love I added to each batch is pancakes made with a mix that starts with Bis and ends with Quik apparently made all the difference, because I’d have people over for pancakes when I came home on weekends.

However, protein pancakes are a different story. Every attempt at a batch resulted in non-fluffy, dense pancakes. No bueno. Really, most attempts at gluten + dairy free pancakes never seemed to work out for me. But, when I got the contain of Superfood Protein Powder from Amazing Grass, I wanted to do something different. Obviously, I love smoothies and make quite a few on the blog. I also just shared a protein bar recipe. Having LOVED Kat’s vegan pancake recipe, I decided I’d try my hand a a protein pancake.
I prepared myself for multiple attempts. I measured out each ingredient, something I tend to guestimate. You know what happened?! My batch of chocolate peanut butter protein pancakes was PERFECT. On the FIRST TRY! Say what?! Obviously, I was pumped. I’m working on trying to be a better food blogger and to not have to make multiple recipes is a dream. Not likely to happen again for a long time, right?!

I think letting the milk and acv sit for a few minutes really helped to lighten things up, along with sifting the dry ingredients! Plus, cooking on lower heat. When I make cakes, I want to EAT THE CAKES, so I don’t often do the lower/slower cook time that is needed. Back in college, I was all about fixing the temperature to get the fluffiest pancakes I could.
Now, I may or may not have eaten 4 for breakfast…and then 2 more post photo shoot. What’s the deal with shooting food photo: do you eat the meal after? Save it? I’m learning all the things by doing more recipes!
- 3/4 cup All Purpose Gluten Free Flour
- 1 1/4 cup Non-dairy Milk
- 1/4 heaping cup Amazing Grass Chocolate Peanut Butter Protein Superfood Powder
- 1 TBSP Maple Syrup
- 1 TBSP Natural Peanut Butter
- 1 TBSP Raw Apple Cider Vinegar
- 1/2 TBSP Baking Powder
- 1 TBSP Cinnamon
- 2 TBSP Coconut Flour
- pinch salt
- Coconut Oil
- Peanut Butter drizzle (optional)
- Handful Chocolate Chips
- Mix apple cider vinegar and non-dairy milk in measuring cup or bowl. Mix and let milk curdle.
- Meanwhile, mix flour, protein powder, baking powder, cinnamon, coconut flour and salt in a bowl.
- Heat griddle over medium heat and add coconut oil.
- Add peanut butter (melt slightly, if needed) and maple syrup to milk mixture. Mix well.
- Add wet ingredients to dry ingredients and mix to combine. A few lumps is okay.
- Scoop mixture into pancake sized circles on griddle. Sprinkle with chocolate chips. Cook a little low and slow, flipping once bubbles form.
- Top with more maple syrup, melted peanut butter and fresh banana!

Let’s talk about this superfood protein powder, shall we?! I’ve been a fan of Amazing Grass for a long time now (1, 2). Their greens are one of my favorite brands and a brand I ALWAYS recommend to my client. I was super excited to see that they came out with a superfood blend, that included greens. Ya’ll know how I LOVE my greens and protein powders that have a few servings of veggies.

I had every intention of announcing Sarah yesterday, but by the time I got home Tuesday night, I was beat! I went to bed at 9pm. This is the first week of my full time job AND training clients. Tuesday and today, I’m up at 5:30am to get ready for work, train a client and then get there by 8am. Wednesday and Friday, I’m at the gym AT 5:20am to train and work before going into the office at 8am. Wednesday…I had 4 cups of coffee. It was not smart, I know, but I needed something! I forced myself to finish this post and get stuff ready for work before crashing! Luckily, my super early mornings stop next week and I’m down to 3 days of waking up at 5:30am. I’ve been a little behind on alllll the things, clearly, but I’m hoping to catch up this weekend!
The best part of the week, though, was enjoying a chocolate peanut butter protein smoothie nearly every morning and having a scoop in my overnight oats on Tuesday! New current favorite!
