Strawberry Beet Protein Smoothie

Let’s just set the record straight, 99.9% of the time, my morning smoothie is GIANT and in a big fat cup. Not this tiny little wine glass. Isn’t it cute!?

The thing is that I don’t have any giant cups that are cute and worthy of blog photos. Except maybe a giant mason jar which I didn’t think about using until this moment…

The good news is that this little cup only contains part of the smoothie. After I snapped some shots, I added it all to my big smoothie cup (#bigsmoothiecup). Guys, it was delicious.

I absolutely love beets. The Hubs hates beets. Like, haaaaatees beets. If you ask him if there is one food he doesn’t like, he will say beets.

beet protein smoothieWhich is funny because beets are seriously so versatile, so they can make a ton of dishes taste great. And beets are slightly sweet, and since he has a sweet tooth, I would have figured he’d like them. I’ve tried having him taste smoothies, much like this one, that I’ve sneaked beets into, thinking that he’d like it and I could say – ‘HAHAH – you do like them!’ But no goes. I think he knows when I add beets based on the color.

Do you see how pink that is? Ladies that love pink – would you not want to sip on this smoothie every single day? Not only is it beautiful, it’s nutrient dense.

beet protein smoothieBeets are packed with folate, magnesium, manganese, vitamin b-6, potassium, choline and betaine. Both choline and betaine play a role in reducing inflammation in our body. This is why I love beets if I experiences any DOMS (delayed onset muscle soreness). Beets also have detoxification, anti-cancer and fiber related benefits. Plus, beets also play a role in exercise performance…but more on that later.

You have your healthy omega-3 fats (and a little protein + fiber) from your chia seeds. You get your protein from the collagen peptides and protein powder, plus some additional vitamins and minerals if you go with the VegaOne option. And then why not just add in servings of greens?!

See, you are getting all my requirements for a healthy meal in one giant, lovely smoothie: fats. protein. carbs. greens.

I enjoyed this smoothie for breakfast one morning last week. It would be just as delicious as a post-workout or even dessert smoothie. It does yield a large cup, so just keep an eye on portion size, depending on when you enjoy it.

How was your weekend?! Actually, how have your last few weeks been?! I haven’t published a post since the end of July! Things are good over at Burpees for Breakfast headquarters.

Today starts the 3rd week (how has it been so long already!) of me working part-time at my once full-time gig. The Lord worked it out in such a way that The Hubs and I made the decision for me to go part-time with work, so I could work on B4B part-time and on our Real Estate company part-time. I work Monday to Thursday from 11-4 and then have Friday off. It’s been nice and an adjustment, for sure. I’ve been finishing up house projects the last couple Friday’s/weekends.

I’m on 7 days of meditating (for 5- 10 minutes), doing my devos and journaling as soon as I wake up in the morning. It’s been SO awesome. And I’ve been waking up within a few to 15 minutes of my alarm! I gotta say too, it’s been hard – and a little scary, but I’m determined to make it work for me!

This weekend was interesting, but mostly great! Hah. Friday, I woke up bright and early for a Toastmasters meeting (a public speaking group). I’m officially joining next week – woo! I spent some time working before we took a Krav Maga class. It was SO fun, but I am still nursing battle wounds – scarred knuckles. I did some work and other random things I can’t exactly remember.

Saturday, I had my class at Fabletics, which was great! Friday night, The Hubs said our friends invited us kayaking, but we weren’t 100% sure it was on. I got home and he said it was off, so I showered. When I got out, it was back on! Hah. We quickly ran some errands and then went out. It ended up being a 7 hour (not the 3-4hr we thought) trip. I got burned, peed in the river alot and ended up super hangry by the time we got home at 8pm. I wolfed down 5 – yes 5 pieces of pizza – watched Downton Abbey and feel asleep. Sunday was such an off day for me. It was the last day of my period and I don’t know if it was a combo of physical stress from Friday/Saturday and mental stress, but I cried – twice. It sucked because I loathe crying. I did a bit of food prep, but most of the day was spent watching Downton Abbey with The Hubs, relaxing.

Today, although it’s rainy, is much better and I’m ready to tackle the week! And wishing I had beets to make this strawberry beet protein smoothie!!
